Sweet Potato crisps with Avocado Dip

The inspiration for this recipe came  from Lola berry's new book Summer Food. Lola's recipe is much more exciting than mine - she does some fancy things to the Avocado dip and also has a gorgeous Tahini Dip. 

I am loving trying out her recipes.All her books are amazing

Here is how I did it:

Sweet Potato crisps

Thinly slice a sweet potato & place in a plastic bag with  a good handful of either walnuts or Pecans

Add 1 teaspoon of Cumin & 1 teaspoon of Cinnamon to the bag and shake

Add a drizzle of Maple & a drizzle of Olive Oil and shake and mix to get good coverage.

Spread sweet potato slices & Nuts in one layer on a large flat baking tray that  has been covered with baking paper.

Bake in a moderate oven until crisp

Easy Avocado Dip

Scoop out the flesh of an avocado and mash with a fork . Add a squeeze of Lemon Juice and season with salt and pepper

Optional :We decorated with a few chilli flakes but often use sesame seeds

The Pesto was store bought at Thomas Dux  (Gluten and dairy free) but any other dip would serve you well

This is such a tasty snack that everyone will love and it has become a regular option at our house.
